Likely occurrence of hazard (1,2,3,4,5) and severity of the effects (1,2,3,4,5) considered fully during the hazard analysis, so the risk coefficient is 1-20, if the risk coefficient of any identified hazards is from 1 to 10, the hazard shall be defined as significant hazard, then decision tree will be used to decision CCP.

Dehydrated Cabbage New Crop CCP1: raw material receiving: pesticide residues test shows negative and no allergen contaminated. IQC review base declaration from qualified suppliers per batch.
Air-Dried Cabbage White CCP2, blanching or disinfection: blanching temp more than 95℃ and duration time 3-10 mins depends on different product; disinfecting concentration of NaClO 200-300 ppm and duration time 7-10 mins. Operators monitor the temp/concentration and time, keep the record once per 30 mins for blanching or once per 15 mins for disinfecting.
New Crop Dried Cabbage White CCP3: metal detection: FeΦ≤0.7 mm, SUSΦ≤1.2 mm, non-FeΦ≤0.8 mm. Operators monitor the product passing by metal detectors continuously, and challenge with standards cards before and end of the production and per 2 hours during the production.
